Early in the selling season we sell a darker "wild flower" honey, later in the selling season we offer "clover honey". All of our honey is produced by local North Carolina hives.
We do not pressure-filter our honey like that which is found in super chain stores. That type of filtering is necessary in order to give the resulting product the long liquid shelf life needed by supermarkets, but we believe that flavor, character and nutrients are sacrificed to obtain that type of shelf life. Our liquid honey is never heated above 130f, and it is filtered only enough to remove the impurities such as pieces of comb. All natural honey will crystallize or turn solid over time. This is normal, it happens to all honey that has not been over heated. This honey is not bad, in fact honey will never go bad if stored in a sealed container and in a cool place. To re-liquefy the honey place it in a pan of warm water until the honey turns back its fluid state. *Did you know when they discovered King Tut's tomb they found honey in it and it was still edible?*
The Cane Mountain Range is part of an area known as the Piedmont or the foothills, and is rich in history and culture. The area abounds with blackberry, tulip poplar, wildflowers, peach and apple orchards all of which makes our honey taste amazing!
